在酿酒工艺中，蒸汽锅炉/蒸汽发生器是必不可少的。常用的蒸汽锅炉有：燃煤锅炉、天然气锅炉、生物质锅炉、电蒸汽发生器等。</p><p> 酿酒是利用微生物发酵生产含一定浓度酒精饮料的过程。酿酒原料与酿酒容器，是谷物酿酒的两个先决条件。</p><p> 传统酿酒工艺：原料→浸泡→初蒸→焖粮→复蒸→摊凉→加曲→装箱培菌→配槽→装桶发酵→<b>蒸馏</b>→成品酒，在蒸馏工艺中，一款合适好用的蒸汽锅炉是必不可少的，供应蒸汽的质量直接会影响到出酒的量和度数。</p><p> 蒸酒生产工艺：①将蒸汽从酿酒锅底部通入 ②将酒糟一层层铺进酿酒锅 ③蒸汽穿透酒糟，从酿酒锅顶部的管道进入冷凝器 ④蒸汽在冷凝器内经过循环冷却水的冷却，变成液态的酒，流进装酒器皿内。</p><p> <br></p><p> <strong>酿酒锅炉的特点：</strong></p><p> 1）当前采用传统酿酒的大多数是小型酒厂或个体作坊，通常单次蒸锅的酒糟量都不大，因此需要的蒸汽锅炉也都不大，使用煤锅炉大都是0.5吨以内。</p><p> 2）酿酒需要蒸汽压力和温度稳定</p><p> 结合酿酒的特点，如何选择一款合适的蒸汽锅炉呢？</p><p> 当前小型煤锅炉全部要被淘汰，天燃气锅炉的燃气管道开口费很好，生物质锅炉需要一直买燃料，而且燃料价格一直上涨，甚至部分地区不让使用生物质锅炉；电蒸汽发生器体积小，自动化程度高，而且全国提倡煤改电，很多地区电价有优惠。因此，从设备投入成本、使用成本、安装使用方便性、安全性综合考虑，对于酿酒行业，使用电蒸汽发生器是最佳的选择。</p><p> 电蒸汽发生器又分为电磁蒸汽发生器和电热管（电阻）蒸汽发生器，电磁蒸汽发生器相对电热管（电阻）蒸汽发生器，具有加热速度快、安全性高、热效率高等优势，因此电磁蒸汽发生器是最佳的选择。</p><p> <b>电磁蒸汽发生器的优势：</b></p><p> 1、电磁感应加热原理速度快，通常3 分钟内就能产生高质量的蒸汽；</p><p> 2、传统的电阻丝加热蒸汽发生器内部电阻丝发热体浸泡在水里很容易结垢，局部温度很容易过高烧坏电阻丝，导致电阻丝一般3个月就要更换一次，并且还容易导致漏电现象，对操作人员造成伤害。电磁蒸汽发生器是对整个炉体加热，发热部分不直接接触水，核心部分都是水电分离，不会造成漏电现象，且磁化水不易结垢；</p><p> 3、电磁蒸汽发生器可以做成免检产品，不属于特种设备，不需要报备和年检；</p><p> 4、电磁蒸汽发生器自动化程度高，不需要人员看管；</p><p> 5、电磁蒸汽发生器体积小，安装方便，可以直接放在反应釜旁边，蒸汽管道短，热量损耗很小。</p><p> </p><p> <strong>应用案例：</strong></p><p> 1）生产设备：酿酒设备为不锈钢内衬的酿酒锅+不锈钢冷凝器+蒸汽发生器</p><p> 2）单次酒糟量：500公斤</p><p>
